pocket pita bruchetta.


{ready to go in the oven} {ready to eat}



so this has become my new favorite dinner! and it is beyond easy to make. i can get these made and in the oven and ready to eat in fifteen minutes, which is perfect for the busy days.

you will need{per pocket} :
1 pita pocket cut in half
3 slices of small tomatoes
lots of Parmesan/feta/mozzarella/other strong cheeses of your liking
olive oil with italian spices mixed in

cut the pita pocket in half, and coat the inside in the spiced up olive oil. then, slide in the tomatoes and cheeses, and finish it off with a little more olive oil to cover. see... its that easy. and, dont let the easy assembly fool you---these things are truly amazing, the flavors of the cheeses and the spices really make these pita pockets REALLY good!
